You can roast coffee at home! In fact, many coffee enthusiasts prefer to roast their own coffee beans to achieve a more personalized and fresh taste.
To roast coffee at home, you will need green coffee beans, a heat source (such as an oven, stovetop, or dedicated coffee roaster), a roasting vessel (such as a popcorn maker, cast iron skillet, or dedicated coffee roasting machine), and a way to cool the beans quickly after roasting (such as a colander or cooling tray).
Here are some general steps for roasting coffee at home:
Preheat your roasting vessel and heat source to the desired temperature.
Add the green coffee beans to the roasting vessel, taking care not to overfill it.
Begin roasting the beans, stirring them constantly to ensure even roasting.
Keep an eye on the beans as they roast and use your senses (sight, smell, and sound) to determine when they are done to your liking. Different levels of roasting will produce different flavors and aromas, so experiment to find your preferred roast level.
Once the beans are roasted to your liking, quickly transfer them to a colander or cooling tray to cool and stop the roasting process.
Store the roasted beans in an airtight container away from light, heat, and moisture.
Remember that roasting coffee can produce smoke and strong odors, so make sure to roast in a well-ventilated area and consider using a dedicated coffee roasting machine if you plan to roast regularly. Happy roasting!
]]>Pouring boiled water into the Italian Moka pot instead of cold water is important for a few reasons:
Proper Extraction: The Moka pot works by passing hot water through coffee grounds to extract flavor and oils. If cold water is used, it takes longer for the water to heat up and reach the necessary temperature to properly extract the coffee. This can result in under-extracted coffee that lacks flavor and body.
Consistent Temperature: Starting with boiling water ensures that the temperature of the water remains consistent throughout the brewing process. This is important for achieving a balanced and flavorful cup of coffee.
Preventing Overheating: If cold water is used, it will take longer for the water to heat up, which means that the Moka pot will be on the heat source for a longer period of time. This can cause the coffee to overheat and result in a burnt taste.
In summary, using boiling water in the Italian Moka pot is important for ensuring proper extraction, consistent temperature, and preventing overheating.
The ideal grinding grade for coffee used in an Italian Moka pot is medium-fine. This means that the coffee grounds should be finer than what you would use for a French press or drip coffee maker, but not as fine as espresso.
Using a medium-fine grind allows the water to pass through the coffee grounds at a rate that provides proper extraction, while also allowing the coffee to develop a full-bodied flavor. If the grind is too fine, the water will struggle to pass through the coffee, resulting in over-extracted and bitter coffee. On the other hand, if the grind is too coarse, the water will pass through too quickly, resulting in weak and watery coffee.
To achieve the ideal grind for an Italian Moka pot, it is recommended to use a burr grinder rather than a blade grinder. Burr grinders provide a more consistent grind size, which is important for achieving a balanced and flavorful cup of coffee.
November 20th is the Black Consciousness Day in Brazil. The date was chosen in 2003 because it is the date attributed to the death of Zumbi dos Palmares, who was the great martyr in the Brazilian black struggle. Many slaves worked on Brazilian coffee plantations and after the abolition of slavery in 1888 they were replaced by immigrants.
I, Isabela Santos, founder of IsaBee Coffees, from my privileged position, ask permission to speak few but important words on this subject, on this very important day.
The immigrants who replaced slaves on the coffee plantations after the abolition of slavery, even with poor working conditions, gained the status of having lifted the economy. At the same time, blacks were forced to look for jobs analogous to slavery. The history of slavery cannot be changed, but the struggle belongs to all of us and still continues. Pay attention to the coffee you buy. Do you know where it comes from? We must always be conscious of justice and reparation. Thank you for your attention.

Buying coffee directly from the farmer is a great way to support sustainable and ethical farming practices while also enjoying a high-quality cup of coffee. Here are a few reasons why:

Encourages Sustainable Farming: Many farmers who sell directly to consumers are committed to sustainable farming practices. By buying from them, you're supporting their efforts to grow coffee in an environmentally-friendly way, such as using composting, shade-grown techniques, and organic and mineral fertilizers.
Provides Traceability: When you buy coffee directly from a farmer, you know exactly where your coffee beans came from. This level of traceability can give you peace of mind that your coffee was ethically and sustainably produced.
Allows for Direct Communication: When you buy coffee directly from a farmer, you have the opportunity to communicate directly with the person who grew your coffee. This can give you a deeper understanding of the coffee growing process and help you appreciate the hard work and dedication that goes into producing each cup of coffee.
Delivers Freshness: Coffee that is bought directly from the farmer is often roasted in small batches, ensuring that it is fresh and has not been sitting on a shelf for weeks or months. This can result in a more flavorful and enjoyable cup of coffee.
In summary, buying coffee directly from the farmer can be a great way to support ethical and sustainable farming practices while also enjoying high-quality coffee. If you're looking for a way to feel good about your coffee purchases, buying directly from farmers is a great place to start.
